2023-present: (Arkansas State)
Grimes joined the A-State staff ahead of the 2023 season as tight ends coach and served as interim offensive line coach for the 2024 68 Ventures Bowl before taking the role of offensive line coach and run game coordinator as the Red Wolves won the Xbox Bowl in 2025. 

Grimes helped the Red Wolves to a 38-31 win over Bowling Green in the 68 Ventures Bowl and a 34-28 victory over Missouri State in the Xbox Bowl. The 2024 team claimed eight victories that matched the third highest total in its 33-year history as an FBS member while the 2025 squad won three consecutive road games for the first time since 2015. 

The offensive line’s development is evident in the reduced pressure, cutting sacks by eight since 2022 and lowering tackles for loss allowed by more than 20.  

2022: (UAB)
Oversaw the tight ends unit and helped Blazers to 7-6 record and a win in the Bahamas Bowl. UAB finished the 2022 season ranked eighth nationally in rushing offense (235.6 ypg), 26th in third-down conversions (.452) and 32nd in total offense (438.2) while averaging 30.1 points per game. Under Grimes direction, four different UAB tight ends combined for 28 receptions, 282 yards and three touchdowns.

2017-21: (Campbell)
Served as tight ends coach his entire tenure and was offensive coordinator over his last three seasons. Coordinated special teams his first two years at Campbell. In the 2021 season, Grimes guided the offense to a top 30 ranking in pass efficiency and top 50 in total offense. With a four-game, all-FBS schedule in 2020, the Campbell offense ranked No. 4 among FCS programs in total offense, No. 3 in rushing offense, No. 5 in passing offense and No. 1 in third down conversions at season’s end. In his three seasons as offensive coordinator, Grimes coached six all-conference players, including 2019 Big South Offensive Freshman of the Year quarterback Malik Williams. In 2018 as Campbell’s tight ends coach, the Camels ranked ninth nationally in sacks allowed, clearing the way for six individual 100-yard rushing games. In his first season at Campbell, the Camels set school records for passing touchdowns (21), passing yards per game (207.8) and total offense (436.5).

2014-16: (Cincinnati)
Spent three seasons with the Bearcats as tight ends and fullbacks coach in 2015-16 and graduate assistant for tight ends and special teams in 2014. During his time at Cincinnati, the Bearcats participated in the 2015 Hawaii Bowl, as well as the 2014 Military Bowl after claiming a share of the American Athletic Conference title.
